How to choose

Coffee, breakfast and a place to linger are not the same promise.

A menu can tell you what is sold and roughly what it costs. It cannot tell you how the espresso tastes that morning, whether the room is calm at 11:00 or whether a laptop is welcome through lunch.

That is why this guide chooses cafés by purpose. Use it to build a shortlist, then read the room, ask before opening a laptop and buy enough for the time you stay.

A beautiful room may be the correct design stop and the wrong coffee stop. A roaster-led bar may make the better cup and the worse three-hour conversation.

A café list becomes useful only when every place has a job. Tbilisi has specialist roasters, breakfast rooms, bakery counters, hotel design destinations and neighbourhood cafés that invite a slower hour. They should not be judged by the same measure.

This is not a numbered verdict. A café may belong here because it takes coffee seriously, because its breakfast solves a practical morning or because the room is worth seeing. One strength does not silently prove the others.

Choose the purpose before the neighbourhood

If coffee is the purpose, look for a roaster identity, current bean information and a choice beyond a generic espresso menu. If breakfast is the purpose, check when the kitchen starts and stops; “open at eight” does not prove eggs are served at eight. For conversation, seating and sound matter more than the longest menu. For one hour of email, an explicit branch statement or repeated observation matters more than the sight of somebody else’s laptop.

Shavi’s operator site identifies the brand as a Tbilisi roaster and publishes filter and espresso beans, equipment and five city branches. European Coffee Trip lists the Original’s espresso, filter, cold brew, nitro, decaf and plant-milk range and marked it as a 2025 winner. That is credible evidence of coffee focus—not a substitute for our own comparative tasting.

Likely fit: someone who wants to ask about the bean or compare espresso with filter. Possible disappointment: treating a respected brand as proof that every drink, seat and hour is identical. The official contact page contains awkward Sunday wording, so recheck the specific day before an early trip.

2 · Shavi Coffee Roasters — Ninoshvili

The Ninoshvili branch deserves its own line because branch format changes the decision. Shavi’s current official page confirms the address and hours; current brand activity describes a larger, two-floor space. European Coffee Trip also carries a branch-specific listing.

Likely fit: the same roaster-led menu with a better chance of a longer catch-up near Fabrika and Marjanishvili. Possible disappointment: assuming “larger” means quiet or that laptop use is welcome at every table and time. Those are field questions, not website facts.

3 · Coffee LAB — Kazbegi

The Kazbegi branch is the clearest starting point for Coffee LAB’s roaster identity. The official branch page describes a downstairs bar and separate seating for meetings or solo sessions. Its current delivery menu publishes named beans and roast information alongside coffee and food; European Coffee Trip maintains a branch profile.

Likely fit: coffee with a meeting in Saburtalo, especially when later hours matter. Possible disappointment: assuming the broad food menu makes every table calm or every brew method continuously available. Ask what is dialled in that day and choose the branch by journey, not brand alone.

4 · Coffee LAB — Lisi Lake

The operator places its roasting facility at Lisi and describes a spacious outdoor area for family, friends and dogs, with meals and baked goods. That gives the branch a distinct use: coffee attached to a lake outing, not a central-city pilgrimage.

Likely fit: residents already going to Lisi or wanting outside space. Possible disappointment: paying the transport cost for a café when the weather, traffic or outdoor seating undermines the reason to go. If access, deep shade or distance from smoke matters, ask the branch before travelling.

5 · Tsvari Roasters

Tsvari’s current official site is unusually direct about the intended rhythm: start the morning, stay a while, drink freshly roasted coffee. The address and daily hours are current, and 2026 editorial coverage identifies it as a recent specialty opening.

Likely fit: a deliberate early coffee or unhurried conversation on the Chugureti side of the river. Possible disappointment: crossing town on reputation alone when the coffee style, pastry range or room does not suit you. Start with the drink you normally order, then decide whether the space earns a longer stay.

For breakfast or pastry: read the menu, not the label

6 · Chaduna

Chaduna’s current official menu gives the most transparent breakfast proposition in this shortlist: chizhi bizhi, frittata, scrambled eggs, syrniki or quesadilla at 25 GEL, served all day. Its site lists Tuesday–Sunday until 23:00 and a short Monday until 15:00. Espresso starts at 6 GEL and cappuccino at 9 GEL on the dated menu.

Likely fit: a central breakfast when food matters more than coffee theatre. Possible disappointment: arriving with a group at a tiny room or expecting a quiet desk because the site says laptop-friendly. Reserve when timing matters and treat any laptop claim as one short, considerate session.

7 · Stamba Bakery

The bakery is a lower-commitment way to experience Stamba’s former printing-house interior. The official page centres sourdough and pastries made with Georgian wheat from Udabno Farm; the current delivery menu lists bread at 11 GEL and savoury quiche at 13 GEL. Coffee is ordered separately in the wider complex.

Likely fit: pastry, architecture and a short meeting point. Possible disappointment: calling it a coffee-first destination because the room photographs well, or expecting the bakery counter to operate like full Café Stamba. Queue, seating, coffee hand-off and accessibility need direct observation.

8 · BARR

BARR is one of the 2026 openings worth watching. Current editorial coverage places it in Tbilisi’s new specialty group, while its active menu publishes breakfast, bowls, sandwiches and a full coffee section: espresso 9 GEL, cappuccino 12 GEL, flat white or latte 13 GEL and filter 12 GEL.

Likely fit: a newer Vake room where breakfast and coffee have equal billing. Possible disappointment: treating an active delivery menu and opening buzz as evidence of long-term consistency. This inclusion remains a lead until a specialist tasting, direct venue confirmation and seating/access check are complete.

9 · Puri Guliani — Saarbrücken Square

Puri Guliani belongs here for Georgian bakery and breakfast rather than specialist-coffee leadership. Its current menu publishes breakfast offers from 12–35 GEL, individual breakfast dishes, pastries and coffee at 8.50 GEL. The Saarbrücken Square location also gives visitors a reason to cross the river for a sit-down morning.

Likely fit: a fuller Georgian bakery breakfast, family table or pastry stop. Possible disappointment: expecting every delivery offer to be available in the dining room, or choosing it for coffee craft alone. Confirm the breakfast window and current offer before travelling.

10 · NUR

NUR provides a neighbourhood-scale alternative to hotel breakfast. Its current menu lists filter coffee, espresso drinks, pastries and compact dishes such as oat pancakes or potato waffles; European Coffee Trip records espresso, filter, cold brew, decaf and plant milk.

Likely fit: a Vake breakfast when you want coffee choice without a large restaurant. Possible disappointment: assuming a specialist directory’s amenity icons prove the exact seat, access route or laptop welcome. The visit must check the room, service pace and current menu directly.

For conversation or reading: protect the purpose

Tsvari and Shavi Ninoshvili lead the conversation shortlist because current operator signals describe space to stay, but neither gets a permanent “quiet” label without observation. Noise changes with music, queue, group size and time. Meet earlier, buy appropriately and keep a second branch nearby when an important conversation needs privacy.

11 · They Said Books

The reason to choose They Said Books is not a claim that it beats every roaster. It is the combination of books, coffee and a slower cultural stop. A current specialist profile lists espresso, filter, cold brew, decaf and plant milk alongside breakfast and lunch.

Likely fit: browsing, reading or meeting someone who values the room as much as the cup. Possible disappointment: assuming “bookshop” guarantees silence or that a directory profile replaces a current menu. Call the exact branch when quiet, food or a particular table matters.

One laptop hour is not a workday

Coffee LAB’s official Paliashvili description explicitly mentions remote work, making it branch 12 in this guide and the clearest desk-research candidate for a short email session. European Coffee Trip marks Shavi Original and They Said Books as laptop-friendly. Those signals still do not grant a permanent right to an outlet, a call or a table during a busy service.

12 · Coffee LAB — Paliashvili

A café sells hospitality, not a guaranteed desk. Serious work belongs in a workspace designed and priced for it.

Order without pretending to be a coffee judge

EspressoThe small concentrated baseline. Ask what bean is being used if that matters to you.
Filter / batch brewPrepared through a filter; batch may be ready quickly, while a hand brew may take longer. Ask what is available now.
Flat white / cappuccino / latteAll combine espresso and milk in different proportions, but cup sizes and recipes vary by café. Order by the balance you want.
Plant milkAvailability and surcharge change. Confirm the exact milk and ask about allergens or cross-contact when medically important.

“Specialty” signals attention to sourcing and preparation; it does not guarantee that every person will prefer the flavour or every bar shift will be identical. Say whether you want brighter, fruitier flavours or more chocolate and nut tones, then let the barista suggest the current bean. The most useful comparison is the cup in front of you, not a universal ranking.

Protect yourself from stale café lists

Erti Kava appears in older Tbilisi café roundups, but multiple current 2026 listings mark the central Lagidze branch closed. A separate Vake listing may still operate, yet direct branch confirmation is not strong enough for this release. The correct editorial response is not to merge the addresses and hope; it is to leave Erti Kava out until the operator confirms the exact active branch, menu and hours.

Before you settle in

Visit the exact branch at the sort of hour you plan to use it. A calm Tuesday morning says little about a Saturday brunch, and one branch’s room, menu and laptop manners should never be copied across the whole brand.

If the coffee itself is the reason for going, ask what is being served that day. If work is the reason, ask before opening a laptop, order appropriately and use the Coworking guide when privacy, power or a dependable full day matters.

A useful habit: confirm the branch, current hours and dine-in menu before crossing town. Prices in this guide are dated snapshots, not promises.
